Curry-Coconut Shrimp

Serve this flavorful shrimp and sauce over a bowl of rice.

Cooking Time: 13 minutes

Servings: 4

Ingredients:

• 1 tbsp. olive oil

• 1 diced onion

• 1 diced red bell pepper

• 2 minced garlic cloves

• ½ tsp. cumin

• 1 tsp. coriander

• ½ tsp. turmeric

• 1 tbsp. curry powder

• 1 cup sweetened coconut milk

• Dash red pepper flakes

• 1 lb. peeled and deveined shrimp

• 1 tbsp. cornstarch

• 3 tbsp. chopped fresh cilantro

• ¾ cup chopped peanuts

Directions:

1. Heat the oil in a pan.

2. Sauté the onion, pepper and garlic for 5 minutes.

3. Stir in the spices and cook for 1 more minutes.

4. Add the coconut milk, sugar and red pepper flakes.

5. Bring the liquid to a boil and lower the heat.

6. Cook for 2 minutes.

7. Add the shrimp and cook for 5 minutes.

8. Combine the corn starch with 1 tbsp. of water and stir into the sauce.

9. Add the cilantro and remove from the stove. 10. Serve with chopped peanuts.
